How to Make Delicious Gluten Free Lemon Blueberry Squares

These squares are bursting with bright lemony flavor, complemented by the sweet and juicy blueberries, all atop a gluten-free oat flour base. The creamy cream cheese icing on top adds the perfect finishing touch to this irresistible treat.

1. Ingredients

1 cup oat flour

1/2 cup cornstarch

1/2 cup sugar

1/4 teaspoon salt

1/2 teaspoon baking soda

3 eggs

1/4 cup plain Greek yogurt or sour cream

3 tablespoons coconut oil 

zest of 2 lemons

2 tablespoons fresh lemon juice

1 teaspoon vanilla

125g fresh blueberries

Icing

3/4 cup powdered sugar

250g cream cheese

1 teaspoon vanilla

1 tablespoon fresh lemon juice

 

2. Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Line an 8×8 or 9×9-inch square baking pan with parchment paper, ensuring some overhang on the sides for easy removal.
  3. In a large mixing bowl, combine the oat flour, cornstarch, sugar, salt, and baking soda.
  4. In a separate bowl, whisk together the eggs, Greek yogurt (or sour cream), coconut oil, lemon zest, lemon juice, and vanilla until well combined.
  5. Pour the wet mixture into the dry mixture and stir by hand until the batter is smooth.
  6. Gently fold in the fresh blueberries into the batter.
  7. Pour the batter into the prepared baking pan, spreading it evenly.
  8. Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Once baked, remove the pan from the oven and allow it to cool in the pan for 5-10 minutes.
  10. After the initial cooling, use the parchment paper overhangs to carefully lift the entire square out of the pan and transfer it to a wire rack to cool completely.
 

3. For the Icing

  1. In a separate bowl, whisk together the powdered sugar, cream cheese, vanilla, and fresh lemon juice until the icing is smooth and well combined.
  2. Once the squares have cooled completely, spread the icing evenly over the top.
  3. Cut the Lemon Blueberry Squares into desired-sized squares.
  4. Serve and enjoy!
